
Yum! Zucchini Chips

It seems most people have a sweet tooth that is their ‘weakness’ when it comes to junky food.
For me, I’ve never had an issue with sweets, but Oh! Let me tell you, when it comes to salty carbs, I am all over it! For example, I freaking love me some salt and vinegar chips.
So, I have had to come up with a solution for when those cravings hit.
Enter: Zucchini Chips.
They are a lot easier to make than I imagined.
Ingredients:
- 1 medium sized zucchini
- 1 Tbsp vinegar
- a pinch of sea salt
First, preheat oven to 350.
I used my (dangerous) mandolin to slice my zucchini into thin slices. I used the second to thinnest setting.
Next, place the sliced zucchini, vinegar, & salt in a bowl and mix well.
Then lay zucchini on a metal pan lined with parchment paper.
Now just cook in oven for 40 minutes, or until crispy.
*NOTE* Do not use a lot of salt – for this recipe, a little goes a long way. Also, some of mine browned because I got impatient and turned on the broiler at the last minute… I do NOT recommend doing this.
