
YUM! Quick & Easy Pesto Pasta

Today’s quick & easy pesto pasta with chicken sausage was inspired by… what I had in the pantry and refrigerator! 🙂
Honestly though, my food stores were running low and I needed to throw something together quickly because I was so NOT feeling like cooking dinner. (I mean, some days are rougher than others, ya know?)
Anywho, I had the chicken sausage on hand because I bought in on sale & decided to build a meal around the protein.
This pasta dish is decadent and filling without weighing you down!
Ingredients:
- Chicken sausage, cut into 1/2 thick pieces
- 8oz package sliced mushrooms
- 1 – 2 Tbsp pesto, as desired
- fettuccine noodles
- 1 tsp olive oil
First, get a pot of water boiling to cook your fettuccine noodles. I made about 2 cups of noodles.
Then, heat a deep sided pan to medium, add olive oil, & cook your mushrooms and chicken sausage.
Stir occasionally until mushrooms become a nice brown color & soft (about 10 minutes).
Drain fettuccine noodles & add to pan.
Then add your pesto! I love it, so I used about 2 tablespoons.
This particular pesto was homemade with basil by my amazing mother! But store bought &/or pea would work well too. (Typing that made me feel like Ina Garten. haha)
Now turn the heat down to low & mix it all together. Make sure the yummy pesto coats everything!
Okay, so you’re dinner is ready to enjoy. Fill up a pasta bowl and top with some Parmesan cheese and more pesto if you want!
