
Yum! Cauliflower Crust Pizza

I’m a big fan of using cauliflower as a sneaky replacement for carbs. I make ‘tater tots’, ‘mashed potatoes’, & now pizza crust with them. (Pizza! Pizza! Pizza!)
At our house, we love to make our own pizzas – it’s relatively easy, cheap, & tends to turn out healthier than delivery.
If you’ve seen my Caprese Pizza, this features the same toppings, just with a healthier crust.
**edit** I’ve been thinking a lot about this recipe & it’s a lot of crust, so if you want a very thin, crispy crust then half the recipe!
Ingredients:
- 1 lb bag frozen cauliflower
- 1 Tbsp garlic powder
- pinch of salt
- 2 tsp Italian seasoning
- 2 eggs
- 1/3 cup parmesan cheese
First, I steamed my cauliflower & preheat oven to 350 degrees.
While that is happening, put your other ingredients in a bowl (these photos show a half of this recipe).
When the cauliflower is finished steaming, let them cool for a few minutes. Then add to your food processor & chop it up into very small pieces. If you don’t have a food processor, you can mash the cauliflower up by hand.
Once finished & cooled, take a tea towel or cheesecloth to squeeze out the excess water of the cauliflower. (In these photos, I skipped this step – however, doing so will make your crust crispier!)
Mix cauliflower with ingredients in the bowl.
Once blended well, shape into a pizza crust on some wax or parchment paper on a pizza pan (or stone).
Place into oven for 15 minutes or when edge begins to turn golden.
Now add the toppings you want & put into oven for another 10 minutes.
For this one I added pesto, mozzarella, spinach, tomatoes, & balsamic vinaigrette.
So delicious! Seriously.
For my fellow 21 Day Fix’ers: Crust Only (half the pizza) = 1 1/2 green, 1/2 blue, 1/2 red
