
Yum! Asian Chicken Tacos

This asian chicken taco recipe is great for a week day as it’s easy and uses a crock pot!
I personally love crock pot recipes because I start it before I go to work and it’s done by the time I get off. Which is amazing since I don’t have to use too much energy to fix a meal for dinner.
Now, I used two chicken leg quarters for this particular time because that is what I had on hand. You could use any type of chicken, though.
What you need:
- Chicken
- Soy Sauce
- Sesame Seed Oil
- Powdered Ginger
- Powdered Garlic
- Powdered Onion
First, I washed the chicken off and placed into the crock pot.
Next, I sprinkled about a tablespoon of ginger on top of the chicken.
Then, sprinkle about a tablespoon of the garlic on the chicken.
Then, about a tablespoon of onion powder.
Next I put about a tablespoon of the sesame oil.
Then I put about a cup of soy sauce in. Enough to cover the bottom.
Next, since I was going to work for a while & I didn’t want too much soy sauce (I was scared it would be too salty or dry out), I added about a half cup of water.
Cook on low for six hours. I never flipped or touched the chicken, but I did turn it to warm once the six hours were up.

Now, from here, you could serve the chicken with rice and green beans or whatever sides you wish. But, for this recipe I wanted to make tacos!
For the filling:
- Soft taco shells
- Lettuce
- Sriracha (not pictured)
- Chopped Chives
- Rice
I cooked the rice in my rice cooker – which I HIGHLY recommend as it is one of the most used kitchen appliances in my home.
While the rice was cooking, I decided to pull apart or shred the chicken.
It was so tender it fell apart when I pulled it out of the crock pot.
Since this was a bone-in chicken, I had to be careful to take out all the bones. If you used a boneless chicken, you will be able to shred much easier.
After shredding both pieces, I put back into the crock pot to soak up the marinade & stay hot.
Then when the rice is done, you put it all together & enjoy!
