The Best Slow Cooker Corned Beef Recipe

Are you ready for a delicious corned beef recipe? Made in the slow cooker? Perfected by a Korean American with no Irish heritage whatsoever?

Did I oversell it up there? 😉 Seriously though, I love corned beef and cabbage… like a whole lot, so I’ve been perfecting this recipe for years. And I am finally ready to share it with the world.

Just writing about it is making me drool… so let me get right to business with the corned beef recipe!

Ingredients

  • 3-5 lbs. corned beef round
  • 1 medium cabbage, chopped
  • 5 red potatoes, rinsed & cubed into 1 inch sections
  • 5 medium sized carrots, peeled & roughly chopped
  • 1/2 red onion, chopped
  • 1 12 oz. can of beer
  • 2 Tbsp butter
  • 1 Tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • a single bay leaf
  • a dash of ground cloves
  • 1 tsp of ground mustard
  • 1/2 tsp of salt

Instructions

Most corned beef packages come with a seasoning packet, I add it in along with everything here. I love lots of flavor in my food.

Place the corned beef, potatoes, & carrots into a large crockpot with bay leaf, clove, mustard, & garlic. Note: You can use baby carrots instead if you want!

Pour in the can of beer. Any unflavored beer works with this recipe, but my first choice is Guinness & second choice is Pabst Blue Ribbon.

Then top-off the crockpot with water. Cook on high for 5-6 hours, adding water if necessary.

About 30 minutes before you are ready to serve, heat olive oil & butter in pan on medium-high heat. Cook chopped cabbage, onion, salt & pepper until cabbage is soft.

Then you can dig into the goodness! Sláinte!

  • 1 Large Slow Cooker
  • 1 Large Pan with high sides

Ingredients

  • Place the corned beef, potatoes, & carrots into a large crockpot with bay leaf, clove, mustard, & garlic. Include seasoning packet if corned beef comes with one.
  • Pour in the can of beer & top off with water.
  • Cook on high for 5-6 hours, adding water if necessary.
  • 30 minutes before you are ready to serve, cook chopped cabbage, onion, salt & pepper, butter, & olive oil in a pan on medium-high heat until cabbage is soft.
