Grilled Stuffed Banana Peppers

The hubs and I love to grill out. When the weather is warm, most of our meals are prepared outside on our charcoal grill.

To keep the redundancy at bay, we try to get creative with what food we grill.

Thus, we came up with these delicious stuffed banana peppers. They are not too spicy and have a great flavor throughout.

You could also bake these banana peppers if you don’t feel like grilling or even use the stuffing mix on other veggies!

Ingredients:

  • 10 banana peppers
  • 4 oz cream cheese
  • 16 oz ricotta cheese
  • 1/2 cup Parmesan cheese
  • 1 Tbs Italian seasoning
  • 1/2 Cup bread crumbs

First, you will want to cut the top part of the banana pepper off & core it to get the seeds out.

Then cut it down one side, almost to the bottom of the pepper.

Thoroughly mix the ricotta cheese, cream cheese, parmesan, Italian seasoning, & bread crumbs together.

Now stuff the cheese mixture into the banana peppers. Make sure to pack some into the bottom part of the pepper that you didn’t cut. Make the stuffing level with the sides of the banana pepper.

When ready, place on the grill for 5-10 minutes, depending on how high the flame is. You will want them slightly charred on the bottom.
