One Pan Chicken: Healthy & Easy!

I do love a one pan recipe because they are simple, delicious, & have the easiest clean up! As much as I love to cook, sometimes I just do not want to deal with the dishes afterwards, so having a one pan recipe on hand allows me to still make a home cooked meal but still be a bit lazy about the whole thing.

Another thing I love about this chicken and veggie tray is that it serves so prettily in a bowl, it is filling, & it’s healthy!

Ingredients:

  • 2 boneless, skinless chicken breasts, cut into cubes
  • ½ large onion, diced
  • 2 medium sweet potatoes, peeled & cubed
  • 1 cup carrots, sliced
  • 2 ½ cups broccoli florets
  • 1Tbsp olive oil
  • pinch of salt
  • pinch of pepper
  • 1 Tbsp Mrs. Dash
  • 1 tsp chili powder
  • 1 tsp paprika

First, preheat your oven to 375 degrees Fahrenheit.

Then, on a foil-lined pan, arrange your chicken, sweet potatoes & onions in a single layer; potatoes/onions on one side, chicken on the other.

Now, evenly coat the chicken & sweet potatoes with olive oil, salt, & pepper. Then sprinkle the Mrs. Dash on the chicken only and the chili & paprika on the potatoes/onions only.

Bake in oven for 20 minutes.

Next, take the pan out of the oven. Stir the chicken then the potatoes. Push to either side and add the carrots & broccoli in the middle section of the pan in a single layer. Add a little more olive oil if necessary.

Then, cook for another 20 minutes. Let cool a few minutes & serve in a bowl.
