
Healthy Mini Meatloaf

It’s mini meatloaf time!
The hubs likes southern comfort foods which leans toward the fried or unhealthy side. This meatloaf stays true to the heart of comfort, but it’s a healthier version since they are made with ground turkey & packed with some delicious veggies!
I did not categorize this under my 21 Day Fix recipes because it does have some non-21DF ingredients, but if you want to substitute or take out anything to make it compliant, then please feel free as it is a great base for it.
Alright, let’s get down to it…
Ingredients:
- 1 lb ground turkey
- 1/4 c ketchup
- 1/2 c onion, chopped
- 1/2 medium pickle, chopped
- 1 Tbs Worcestershire
- 1/2 c carrot, chopped
- 1/2 c mushroom, chopped
- 1 egg
- salt, pepper to taste
- optional: 1/2 c cheese
Preheat oven to 350 degrees Fahrenheit.
The first step for the mini meatloaf is to mix all of the ingredients together in a large bowl. I just used my hands to mix it all up, but you can also use a spoon.
You will see in these photos that I forgot my ketchup. I was so intent on the mixing and the taking of photos, that I completely forgot to add it into the actual mix.
Once the mini meatloaf ingredients are mixed well, you will want to form it into 1 1/2 to 2 inch balls. Place each ball into a lightly greased cup of a muffin pan.
Bakes for 45 minutes. When ten minutes are left, take the mini meatloaf out, top with ketchup, & place back in the oven to finish.
