
Easy Taco Casserole!

I introduce to you my easy taco casserole recipe (aka Taco Pie). In keeping with my ‘Chopped Challenge’ theme from my last recipe post, I thought I would share with you this deliciously easy recipe. In case you did not see my last recipe, my (what I call) ‘Chopped Challenge’ days are when I am running very low on groceries & need to come up with an easy, filling, & delicious meal with what I have on hand… which is not a lot! These days consist of me finding what protein I have & building something out of with little extra ingredients.
This taco casserole was enjoyed immensely for dinner and it reheated very well for lunch the next day, too!
Ingredients:
- 4 cups tortilla chips
- 1 cup cheese
- 1 packet taco seasoning
- 1 can diced tomatoes & chiles, drained
- 1 can refried beans
- 1 can whole kernel corn, drained
- 1 lb ground turkey
First, you need to brown your ground turkey. Then add the taco seasoning and make according to your packets directions. While you are doing this, go ahead and preheat the oven to 350 degrees.
The first layer for your taco casserole are the tortilla chips. I crunched mine up a little bit.
Next you will add the refried beans. I just used a spoon to dollop the beans as evenly as I could over the chips.
Then add the finished ground turkey in an even layer, then the cheese.
Lastly add the can of corn and the tomatoes & chiles.
Bake in the oven for approximately 30 minutes. Let cool for 5-10 before serving.
Top with sour cream, lettuce, cilantro, avocado, or whatever you want!
