
Easy Spinach Dip!

I’ve been making this spinach dip for YEARS. My old roommate & I would make this all the time – maybe just a little more than most people – beacuse it was easy, cheap, & so so good! I mean it, this dip is lick the bowl delicious!
This recipe was inspired by the one found at Knorr’s website. It’s also on the back of mix packet.
Most of the time, to keep it even more simple I won’t even use mayo or green onions. I personally don’t think the mayo really adds anything to it taste-wise, but it does seems to make it creamier. Either way, it is so good!
Ingredients:
- 1 box frozen spinach, thawed
- 16 oz sour cream
- 1 package Knorr’s Vegetable recipe mix
- 1/2 cup mayonnaise
- 1 green onion, chopped
First, add the mayo and sour cream to a medium sized, resealable bowl. Make sure it is a resealable bowl, because you will want to chill the dip in the fridge afterwards.
Then chop your green onion into small pieces.
Next, you will need to squeeze out all the water from the thawed spinach. I simply take fistfuls & hand squeeze over the sink until most of the water is out.
Add the drained spinach & green onions to the mayo and sour cream mixture & mix it all together! Make sure it is mixed well so you don’t have large chunks of spinach stuck together.
Now add the Knorr’s vegetable mix & stir well.
Cover & let it chill in the refrigerator for at least an hour before serving!
It goes great with tortilla chips or Frito scoops! This recipe is great to keep around for snacking or to serve for a get-together.
