Crockpot Buffalo Chicken

I was looking for a yummy and healthy crockpot recipe for chicken the other day and well, the choices outside of ‘mexican-style’ were limited to soups.

(I also have a mexican-style crockpot chicken recipe that is delicious and 21 day fix approved!)

But we had just had tacos, so I was trying to stay away from chili powder.

Anywho, I decided to make a healthy version of buffalo chicken.

It turned out delicious! The hubs didn’t even notice it was ‘healthy’. Also, this bad boy is really easy with few ingredients (my favorite things for weeknight dinners).

Ingredients:

  • 1 lb boneless, skinless chicken breasts
  • 1 small onion, diced
  • 3 cloves garlic, diced
  • 3/4 cup Greek yogurt
  • 1/3 cup hot sauce

Simply place all the ingredients int the crockpot and cook on low for 3-4 hours.

Then, shred up the chicken in the crockpot & give it a good stir.

I ended up adding more hot sauce to mine because it wasn’t as spicy as I personally like it… so that is something to keep in mind.

How you serve it is completely up to you.

For myself, I did romaine lettuce wraps with feta and diced tomatoes.

My husband did a buffalo ranch tortilla wrap.

I plan on using the leftovers as either a pizza topping or put it with some rice or pasta!
