Crispy Buffalo Chicken Bites!

This recipe for crispy buffalo chicken bites came about during my (what I like to call) ‘Chopped Challenge’ days. What that actually means is the kitchen was depleted of most food & the grocery shopping fund was at zilch. Hey, it happens sometimes so you’ve gotta make the best of it!

As you know from previous posts, I try out lots of different foods and recipes because I don’t like to make the same five meals on repeat. So, these Chopped Challenge days are a perfect time for my creative side to come out & put me out of my cooking ‘comfort zone’. Thus, I present to you these deliciously crispy & hot buffalo chicken bites!

Ingredients:

  • 3 boneless, skinless chicken breasts
  • 1/2 cup panko crumbs
  • 1/2 Tbsp garlic powder
  • 1/2 Tbsp onion powder
  • 1/4 cup hot sauce (like Tabasco)

First, you want to preheat your oven to 375. The higher heat cooks the chicken and ensures a crispy but un-burned crust.

Next, take your three chicken breasts and chop them into bite size pieces. They do not need to be perfect, but generally the same size for even cooking.

Now mix together the cut chicken, garlic, onion, & hot sauce in a bowl. Make sure each piece of chicken is coated well!

Then throw your panko crumbs into the bowl & mix well to coat the chicken.

On a lightly greased pan, lay out your buffalo chicken bites and place in the oven to cook for 35 minutes or until lightly browned.

Enjoy these crispy buffalo chicken bites in a variety of ways with some ranch or blue cheese! The night I made these, we went the unhealthy route of adding fries to the side, but I think they could also be great in a salad, wrap, or even on their own at a tailgate party!

Crispy Buffalo Chicken Bites

I present to you these deliciously crispy & hot buffalo chicken bites!

Ingredients
