Another recipe featuring zucchini!

Hey, I had some leftover from zucchini chips and needed to find a yummy, healthy way to use them in the crockpot!

You already know how much I love easy recipes featuring the crockpot, so let’s get this chicken zucchini parmesan recipe started.

Ingredients:

  • 2 medium zucchini, sliced
  • 1 lb boneless, skinless chicken breasts
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 6 sweet peppers, diced
  • 1 Tbsp Italian seasoning
  • 1.5 cup marinara or spaghetti sauce
  • 1/2 cup parmesan cheese

Before I start with the how-to: If you are on the 21 Day Fix & want to make this fully 21 Day Fix approved you will need to switch out the pre-made spaghetti sauce for tomato paste & tomatoes or if you have the Fixate cookbook, use Autumn’s recipe for spaghetti sauce since either of those options have less additives. (I didn’t have these on hand, thus I used my pre-made sauce!)

Ok, now onto how to make this deliciousness.

Layer your ingredients starting with your chicken in the crockpot first, then follow with zucchini, garlic, onion, peppers, Italian seasoning, & spaghetti sauce.

Cook on high 3-4 hours or until chicken is cooked through.

Give it a little stir & add cheese in the last 20 minutes.

Then, enjoy!

I ate mine as is but you could also add some pasta if you need some carbs in your life.

For my 21 Day Fixers: 1 red, 2 green, 1 purple, 1/2 blue

(21DF classifies plain spaghetti sauce as purple)

    This looks WONDERFUL! What could I substitute for peppers if I don’t really care for them ? Or should I just leave them out?

      You can just leave them out if you want!
