
Yum! Chicken Marsala

I am so very excited to share this chicken marsala recipe with you!
This is my take on it & it is delicious! It was a big success with some guests I had over for dinner & I think you’ll enjoy it, too.
It only takes a few ingredients, but there are a few extra steps to get it right. But I took lots of pictures to help. With that said, it is actually a simple recipe.
You will need:
- 1 small package fresh mushrooms
- 4 slices of bacon
- 4 boneless skinless chicken breasts
- butter
- olive oil
- Spaghetti (enough for 4 portions)
- flour
- salt & pepper
- 2 cloves garlic
- 1/2 cup red wine
- fresh parsley (to taste)
First, prep! Slice the mushrooms and the bacon. Dice the garlic cloves.
Place about a cup of flour into a shallow bowl, add salt and pepper to taste.
Next, put enough olive oil to cover the bottom of your pan & about two tablespoons of butter. Set to med/high heat.
Get water boiling to make the spaghetti. Once ready, add the noodles.
Now, take your chicken, lay onto a cutting board or other flat surface. Cover with plastic wrap.
The fun part is next. Take your mallet & pound the chicken until it is about a quarter of an inch thick.
Next, dredge each slice through the flour mixture.
Once the oil is hot, place the chicken into the pan. You may need to do two batched of two pieces each.
Cook the chicken until golden brown, flip, and do the same for the other side.
Once done, place on a paper toweled plate & set off to the side. For example, the microwave or oven.
Now it is time to make the sauce:
Add bacon to the pan and brown.
Add the garlic. Then the mushrooms.
Cook about 5 minutes.
Add the wine to the pan, bring to a boil to cook off the alcohol.
Bring temperature down to low/medium. Simmer for another ten minutes.
Now all that is left is to put it all together! Spaghetti first, then chicken, then cover with sauce. Add parsley on top to taste.
