Yum! Caprese Pizza with Balsamic Glaze

I’m going to let you in on something – this caprese pizza is AMAZING!

The hubs loved it so much, he wanted me to make a second one so he could continue to stuff his face. (I didn’t!)

Ingredients for Caprese Pizza & Balsamic Glaze:

  • (1) pre-made pizza crust
  • pesto
  • fresh mozzarella
  • fresh spinach
  • (2) roma tomatoes
  • balsamic vinegar
  • honey
  • salt & pepper
  • olive oil

First, lay out your pizza crust. I chose a thin pre-made one. And preheat the oven to 375 degrees.

Next, you want to lightly coat the top of the crust with olive oil. I sprinkled it on then used a paper towel to spread it around.

Then take about 2 tablespoons of pesto and spread around the crust. You can add more or less, depending on your preference. I love pesto, so I made sure the crust was coated.

Now cut your mozzarella into slices that are about 1/3 inch thick. You don’t have to be precise. Lay the slices all around the pizza.

Next, top your pizza with spinach. I chose to cover the whole thing since the spinach shrinks when you cook it.

Now slice your tomatoes about the same width as the mozzarella and top the pizza. Salt and pepper to taste.

Before putting the caprese pizza into the oven, get a small saucepan heated on the stove. Pour a cup of balsamic vinegar in and bring to a slight boil (med-high heat). Let boil for a few minutes, then reduce heat to simmer. Stir every few minutes.

Once oven is ready, put pizza straight onto middle rack or on a pizza stone. Leave in for about 7 minutes.

During these seven minutes, continue to stir balsamic vinegar. Add a pinch of salt. It will begin to thicken. Once it does, add a tablespoon of honey and continue stirring.

Once thickened, remove from heat to cool. It will continue to thicken as it cools.

When the pizza is finished, set out. Drizzle the balsamic glaze over the pizza and voila! Your caprese pizza is ready!
