Yum! Buffalo Shrimp Salad

In honor of starting my second round of 21 Day Fix, I am going to share with you what is probably my FAVORITE meal to make. This buffalo shrimp salad has so much flavor (& spiciness!) and is super easy to put together.
The best part is that it is healthy & 21 Day Fix approved! (Note: I make it even when I’m technically not doing a round. haha)
Seriously, I love this buffalo shrimp salad THAT much.
- shrimp (1 red container when cooked)
- romaine lettuce (2 green containers)
- tomato & cucumber (1/2 green container)
- feta cheese (1 blue)
- buffalo sauce, your choice
- olive oil (1 tsp)
First, thaw the shrimp. If measuring by your container, you will want a little more than what fits in the red container as the shrimp shrinks once cooked.
In a small pan, add your olive oil, medium-high heat.
Add your shrimp to the pan once hot. Cook until shrimp turns pink.
Turn heat down. Add your buffalo sauce. You will want about 1/4 cup as the extra sauce will be your salad ‘dressing’.
Warm for another 3-5 minutes.
Cut your romaine, add two green containers to your bowl.
Dice tomato & cucumber, fill to 1/2 green container and add to your bowl.
Fill one blue with feta cheese, add to your bowl.
Now, top with shrimp & sauce.
[This recipe amounts to 2.5 green, 1 red, 1 blue, & 1 tsp]
