
Brussel Sprout ‘Fried Rice’

Are you ready for a veggie overload?
Because this brussel sprout ‘fried rice’ is just that.
You already know how much I love to turn cauliflower into something other than cauliflower & this recipe has it being substituted for rice.
You should try it at least once. The husband & myself enjoyed it a lot as a dish all it’s own. But you could definitely pair it with some chicken or other protein if you wanted.
Ingredients:
- 1 lb cauliflower, chopped in a food processor
- 1/2 lb brussel sprouts, chopped in a food processor
- 1 onion, diced
- 2 cloves garlic, minced
- 2 eggs
- 4 slices turkey bacon, chopped
- 1 tsp sesame oil
- 1 Tbs low-sodium soy sauce
- 1 tsp olive oil
Heat your wok & olive oil to medium-high heat.
Add the onion and garlic. Saute until onions starts to turn translucent.
Next, add the turkey bacon. Cook for 3-5 minutes.
Add the chopped brussel sprouts. Cook for 5 minutes, stirring every minute so the brussel sprouts can get browned on each side.
Now add your chopped cauliflower! Turn heat down to medium.
Cook for another 10 minutes, stirring occasionally.
Add your sesame oil & soy sauce. Stir.
Add your eggs to the middle of the mixture & stir.
(The photo shows only one egg because I only had one on hand – you will want 2!)
Cook for another 5 minutes. And done!
Enjoy this healthified version of brussel sprout fried rice!

Cauliflower & Brussel Sprout Fried Rice

Instructions
- Heat your wok & olive oil to medium-high heat.
- Add the onion and garlic. Saute until onions starts to turn translucent.
- Next, add the turkey bacon. Cook for 3-5 minutes.
- Add the chopped brussel sprouts. Cook for 5 minutes, stirring every minute so the brussel sprouts can get browned on each side.
- Now add your chopped cauliflower! Turn heat down to medium.
- Cook for another 10 minutes, stirring occasionally.
- Add your sesame oil & soy sauce. Stir.
- Add your eggs to the middle of the mixture & stir.
- Cook for another 5 minutes. And done!
