Banana Pancakes are Amazing!

These banana pancakes are such an easy & healthy breakfast! Seriously, it is only TWO ingredients… it can’t get much easier than that! I’ve also ate them as a snack to satisfy any sweet cravings.

I originally saw this recipe at blogilates. Which, if you don’t know who Cassey Ho or POPilates is… I recommend you check it out. She is absolutely AHHmazing! Before I started the 21 Day Fix I was using her youtube videos and they kicked my butt! Hell, I still will play her videos and use her workouts when I wanna change up my workout routine. (Can you tell I am a BIG fan?)

Now onto the good stuff – how to make these pancakes!

Ingredients:
  • 1 ripe banana
  • 2 eggs

Yes, really, that is all you need for this simple recipe. Now all you need to do is mix the two together in a bowl.

I use a fork to mash the banana up, so the riper the better!

Heat a pan to medium heat & put a tiny bit of olive oil in it.

Pour the batter onto the pan.

When it starts to bubble up, time to flip!

Cook on other side for a few minutes. Brown to your liking.

Ingredients
  

  • 1 ripe banana

Instructions
 

  • Mix the banana & eggs together in a bowl.
  • Heat a pan to medium heat & put a tiny bit of olive oil in it.
  • Pour the batter onto the pan.
  • When it starts to bubble up, time to flip!
  • Cook on other side for a few minutes. Brown to your liking.

Notes

Serve alone or topped with some maple syrup.

    WOW! Looks really good! I have a hard time finding healthy things to eat, that contain ingredients that I will actually EAT! I am going to try this one for sure! THANKS
