
Banana Bread Loaf: A Delicious Recipe!

We try to eat up all the bananas we buy in this house, but sometimes those babies can get REAL ripe, REAL fast! So, I have two choices if I don’t want them to go to waste. For some I choose to peel, cut in half, & then freeze for my Shakeology drinks (yum!). For others, I choose to make some delicious banana bread!
This banana bread recipe is simply easy & produces a just-sweet-enough, moist loaf of bread. I was never a fan of banana bread (or sweets in general), but this has just enough sweetness to it that I can eat it alongside my cup of coffee. The hubs loves this stuff and I hope you will too!
Ingredients:
- 4 ripe bananas
- 2 tsp vanilla extract
- 1 c sugar
- 1/2 tsp cinnamon
- 1/2 c butter
- 1 egg
- 1 1/2 c flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 c sour cream
Preheat your oven to 350 degrees.
You can use an electric mixer or mix by hand like I did.
First you want to mix together the butter, sugar, & egg. Whip it up good in a medium size bowl!
Then add in the flour, baking soda, salt, & cinnamon.
Once those are mixed well, add the sour cream, vanilla extract, & bananas.
For the bananas you can mash them in a separate bowl before mixing into the banana bread batter or throw them in as little chunks. Either way is up to you! I just tore mine into small chunks as I added them to the bowl.
Once everything is mixed together well, pour the batter into a lightly greased bread loaf pan.
Bake for 60 – 70 minutes or until the inside is cooked. To check if the banana bread is cooked through, you can poke a toothpick into the center. If it comes out clean, it’s done and if it comes out with some batter attached, you need to cook a little longer.
