
21 Day Fix Jambalaya

I was looking for something ‘different’ to eat & putting together what I had on hand, I created this 21 Day Fix approved Jambalaya. It doesn’t take long to make, is easy, & deliciously filling!

Ingredients:
- One spicy/hot turkey sausage, chopped
- 1 small onion, diced
- 1 large clove garlic, minced
- 1/4 cup wild/brown rice
- 4 sweet peppers, chopped
(To make this a ‘real’ jambalaya you can add shrimp – I just did not have any on hand)
Cook your rice.
For this small of an amount, I just put the rice in a microwave safe container with 1/2 cup of water for 10 minutes. Stir at the 5 minute mark. Make sure the container is larger than you think you need as the water will boil over.
Put a medium size pot on med-high heat with a little bit of olive oil.
Once hot, add the onion, peppers, & garlic until aromatic.
Add sausage to pot (& shrimp if you are using it).
Cook on medium heat for 15-20 minutes, stirring occasionally.
Add rice (&any extra water) to pot once finished in microwave.
Salt & pepper to taste.
Remove from heat & serve once sausage is fully cooked.
Ta-Da, you’ve got healthy jambalaya! I enjoyed this for a healthy work lunch.

- Remove from heat & serve once sausage is fully cooked.
